It also deviates from the lagers and pilsners being warm and top fermented but still cold conditioned or lagered. This beer style is under strict supervision brewing rules of the Kölsch Konvention and the Cologne Brewery Association and it is a pale, highly attenuated, hoppy, bright (filtered) top fermented beer and must comply to the Reinheitsgebot.
