Although top fermented beer was made in Plzen since the 13th century, the Czechs had to wait until 1842 for the real deal. The combination of paler malt prepared by British technology, Pilsen's remarkably soft water, local Saaz hops from nearby Žatec, cleaner yeasts and Bavarian-style lagering produced a clear, golden beer thanks to Josef Groll. ABV tends to be between 4-5.5%, Pilsners are golden, full of colours, with high foaminess and lighter flavour.
