Sour Ale

Sourness is easy to define but hard to categorize as a beer style, in our opinion any wild bug used in the fermenting process is a sour – be it from Lactobacillus, Acetobacter, Brettanomyces, or Pediococcus. It loves to compete with the cleaner Saccharomyces yeast to produce complex beers.
