On the eve of Christmas, perhaps the most cozy holiday of the year, dinner traditionally is home-made and vegetarian-based and we usually are worried that we will starve to death after three kinds of sarmi and stuffed peppers, beans with sauerkraut, kyopolu, lentils, chickpeas, bread and all pickled vegetables.

We do not want or dare to change the tradition, but let us give you some ideas of ​​how we can add a little variety to a traditional feast.

Christmas lasts three days, why not start with breakfast ?!

Drunk spinach banitsa

Prepare the washed and chopped spinach (1 kg) to drain. Cut onions, tomatoes (could be sun-dried), garlic and stew them in olive oil. Add the dried spinach and spices (salt, savory, paprika, black pepper) and stew. The pastry (400-500 g ready) sprinkle with the mixture either in layers or rolls. Leave some of the mixture for on the top and finally pour 100 ml of lager beer. Bake the banitsa in a preheated 240 degree oven.

If you find it a good idea - banitsa can go well with a good light beer..berliner weisse, helles, pilsner ;-)

Mushrooms with potatoes and beer

Clean and cut the mushrooms (250g) into large pieces, then slightly fry in hot olive oil. Cut the potatoes(1kg) into circles and spread into a baking dish. Put the fried mushrooms on top. Pour 150ml of lager beer and some water on top. Sprinkle with spices (salt, black pepper and whatever you like) and mix well. Finally, pour a drizzle of oil on top and bake at 200 degrees until done.

Better consume this meal with NEIPA or Sour beer.

Asian style rice with beer

We need 1 sliced carrot, chopped garlic and onion, and sliced mushrooms (100g), olives (20-30g) without the pits. Cook the rice (1 cup) the usual proportions 1:2 water. Fry the onions, garlic and carrots in hot oil for about 2-3 minutes. Add the mushrooms and fry for another 2-3 minutes. Then add the olives, pour in a light beer (50ml) and 1 tbsp. of soy sauce, add salt, dry spices (curry, pepper safran etc) and leave to boil until the liquid disappears. When everything is ready, add the rice to the vegetables and mix well.

Serve with a hoppy pale ale or IPA.

You could also prepare some vegetarian beer cookies for the menu - just add any kind of beer to the flour.

And those go fantastic with desert dark beers - stouts and especially imperial stouts.
