Weissbier – white beer, is derived from Weizenbier- wheat beer and is steeped in German tradition and has a 50% malt bill of barley and wheat. Specialized yeast strains are used to create the banana or spicy flavor. Hefeweizenbier is an unfiltered Wiessbier whereas Kristallweizen is filtered. Weissbier is usually low in bitterness and high in carbonation to balance out the sweetness of the beer. DunkelWeizen uses dark wheat and Weizenstarkbier or Weizenbock are higher in alcohol.
