Halm is a barrel-aged wild blonde beer with annual mug-wort that has had 7 months of wood maturation.
A dry, mildly bitter beer with ‘forgotten herbs’, the kind that are rarely used nowadays. A pity, because they often have wonderful, faintly familiar aromas.
Annual mug-wort gives soft, refreshing notes of citrus and young grass. The spicy Belgian edge of the wild house culture creates a classic character that pairs well with the clean biscuit maltiness of locally grown heirloom grains.

Sour Ale
Sourness is easy to define but hard to categorize as a beer style, in our opinion any wild bug used in the fermenting process is a sour – be it from Lactobacillus, Acetobacter, Brettanomyces, or Pediococcus.
